gluten free peanut butter cookies
although the man and i do not keep a gluten free household, his sister was recently diagnosed with celiac disease. although his blood test came back undetermined, it’s highly likely he at least has a gluten sensetivity. so i’ve decided to delve into the world of gluten free cooking to try and slowly weed gluten from our diet. gluten free baking is considered somewhat difficult to master, so i decided to start with a recipe i had used before, which is “naturally” gluten free. this is probably one of the easiest recipes in the world, and the cookies taste good too! actually, i think i ate a lot of the dough myself(without the eggs, of course!).
anyway, the man likes these and i made a big batch to pack in the freezer for his lunches.
gluten free peanut butter cookies (~22 cookies)
(adapted from one cake two cake)1 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon vanilla
1 egg
1 teaspoon baking soda1. preheat oven to 350
2. mix peanut butter and sugars
3. add egg, vanilla, and baking soda
4. roll dough into balls and bake ~10 mins (if you find your dough too sticky to work with, pop it into the fridge for a few minutes first)
